🍵 Tea

Oolong

Creamy, floral, and complex.

Amount

3 g per 150 ml (approx. 1.5 tsp)

Temperature

85–95 °C (185–203 °F)

Brew Time

1–3 minutes (multiple infusions)

How to Brew

  1. 1

Heat water to 85–95 °C depending on oxidation level — lighter oolongs prefer cooler water.

  2. 2

Rinse your teapot and cups with hot water to pre-warm them.

  3. 3

Add 3 g of oolong per 150 ml. For a gaiwan, use a higher leaf-to-water ratio.

  4. 4

Pour water over leaves and discard after 10 seconds — this is the "rinse" infusion to open the leaves.

  5. 5

Pour again and steep for 1 minute for the first proper infusion.

  6. 6

Pour into cups through a strainer and enjoy. Re-steep adding 30 seconds per subsequent infusion.

Flavour Tips

  • Oolong unfolds over 4–6 infusions — each brings a different layer of flavour.
  • Try the third infusion with a small piece of dark chocolate.
