How to Brew

Heat water to 85–95 °C depending on oxidation level — lighter oolongs prefer cooler water.

Rinse your teapot and cups with hot water to pre-warm them.

Add 3 g of oolong per 150 ml. For a gaiwan, use a higher leaf-to-water ratio.

Pour water over leaves and discard after 10 seconds — this is the "rinse" infusion to open the leaves.

Pour again and steep for 1 minute for the first proper infusion.

Pour into cups through a strainer and enjoy. Re-steep adding 30 seconds per subsequent infusion.

- •Oolong unfolds over 4–6 infusions — each brings a different layer of flavour.
- •Try the third infusion with a small piece of dark chocolate.
