White Tea

How to Brew

Heat fresh water to 70–80 °C. White tea is very sensitive to heat.

Gently place 2–3 g of white tea in a warmed teapot or cup.

Pour the water slowly and gently over the leaves.

Steep for 2–4 minutes, tasting at 2 minutes.

Strain and sip slowly — savour the delicate sweetness.

- •Cold-brew white tea overnight in the fridge for an exceptionally smooth, floral result.
- •Avoid oversteeping — it can turn the flavour unexpectedly bitter.
